There is a new talent that gives you bonus spell damage equal to some
fraction of your stamina, so there's no need to stack spell damage
directly. Just get loads of stam and you get spell damage for free.

I don't know why a paladin tank would want strength, however. Or a
warrior tank either for that matter.

It does add to block value but at a very steep ratio: twenty str for one
block. You'll get a lot more benefit out of other stats.
